Seamus Higgins Teaches Us About The Global Food Supply

Hey there food fans! I'm so happy to be back with you all this week for Episode 169 of The Food For ThoughtCast. My guest today is Seamus Higgins. Seamus spent over 30 years calling the shots and consulting for major global food giants like Nestlé and Premier Foods. In 2017, he made the jump to academia, joining the University of Nottingham to build and lead their brand-new Food Process Engineering MSc program. He’s also a freshly minted author! His new book, Food and Us: The Incredible Story of How Food Shapes Humanity (published by the Royal Society of Chemistry), is written for anyone who loves food and history. Our conversation is all over the place, and you know you love it. We talk about creating food out of thin air, food advertising aimed at children, the line between safe and ultra- processed foods, and the simplicity of sharing a meal in community with others. I enjoyed this conversation immensely, and so did Seamus. We agreed we could have continued on for hours. I hope you enjoy today's episode. Get this and all the other episodes anywhere you find your favorite food podcasts. Thanks for listening and for watching on YouTube. Check out Seamus's new book at all online retailers, and be sure to follow him on Substack as well.
